Tofu Fried Rice

I swapped the eggs in traditional fried rice for tofu scramble, and it was fabulous! This is a great way to use up the extra tofu left from making Vegan Fried “Eggs”, too!

Tofu Fried Rice

Serves 2


  • 1/2 package pressed tofu
  • 1/4 tsp tumeric
  • 1 tbsp miso paste
  • 1 tbsp, plus 1/4 cup soy sauce
  • 1/2 tsp smoked paprika
  • 1/4 tsp black salt
  • 1/4 tsp liquid smoke
  • 1 tbsp sesame oil
  • 1 cup cooked white rice
  • 1 tbsp maple syrup
  • 1 tbsp sriracha
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 large yellow pepper, diced
  • 1 floret broccoli, chopped
  • 1 carrot, chopped
  • 1 large handful power greens


  1. Mash tofu in a bowl with tumeric, miso paste, 1 tbsp soy sauce, smoke paprika, black salt and liquid smoke. Let marinade in the fridge at least 20 min, or overnight, if possible.
  2. Add oil, garlic and onion to a frying pan over medium heat. Saute until the onion is translucent.
  3. Add pepper, broccoli, carrot, and ginger, saute until vegetables brighten in colour.
  4. Add rice, tofu mixture, and remaining seasonings. Mix well, and saute, turning frequently, until tofu mixture and rice start to crisp up.
  5. Add in power greens, saute until wilted.
  6. Serve and enjoy!
