
I swapped the eggs in traditional fried rice for tofu scramble, and it was fabulous! This is a great way to use up the extra tofu left from making Vegan Fried “Eggs”, too!
Tofu Fried Rice
Serves 2
Ingredients
- 1/2 package pressed tofu
- 1/4 tsp tumeric
- 1 tbsp miso paste
- 1 tbsp, plus 1/4 cup soy sauce
- 1/2 tsp smoked paprika
- 1/4 tsp black salt
- 1/4 tsp liquid smoke
- 1 tbsp sesame oil
- 1 cup cooked white rice
- 1 tbsp maple syrup
- 1 tbsp sriracha
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 large yellow pepper, diced
- 1 floret broccoli, chopped
- 1 carrot, chopped
- 1 large handful power greens
Instructions
- Mash tofu in a bowl with tumeric, miso paste, 1 tbsp soy sauce, smoke paprika, black salt and liquid smoke. Let marinade in the fridge at least 20 min, or overnight, if possible.
- Add oil, garlic and onion to a frying pan over medium heat. Saute until the onion is translucent.
- Add pepper, broccoli, carrot, and ginger, saute until vegetables brighten in colour.
- Add rice, tofu mixture, and remaining seasonings. Mix well, and saute, turning frequently, until tofu mixture and rice start to crisp up.
- Add in power greens, saute until wilted.
- Serve and enjoy!
