
One of the most common things that plant-based people miss is eggs, and I do love a good fried egg. Give these babies a try, they’ll knock your socks off!
Vegan Fried “Eggs”
Ingredients
For the whites:
- 1 package pressed tofu
- 1 tbsp miso paste
- 1 tbsp soy sauce
- 1/4 tsp black salt
- water, as needed
- oil, for frying
For the yolks:
- 2 tbsp mashed potato flakes
- 1 tsp nutritional yeast
- 1/3 cup hot water
- 1/4 tsp tumeric
- 1/4 tsp black salt
- 2 tsp grapeseed oil
Instructions
- Wrap the tofu block in paper towel, place between two plates, and put a book or heavy object on top. Let the tofu press for at least 30 min.
- Use a 1/2 cup dry measure to cut discs into the tofu block, and slice each disc in half width-wise, so you’re left with twice as many thinner discs.
- Use a shot glass to cut a hole in the middle of each disc.
- Mix remaining whites ingredients, and add water until the marinade is a saucy consistency.
- Dip the discs in the marinade, put in an airtight container, and pour the remaining marinade on top. Let soak in the fridge for at least 2 hours, or overnight, if possible.
- Mix all yolk ingredients together in a bowl. Let stand on the counter for 10 minutes, to rehydrate mashed potato flakes.
- Heat some oil in a frying pan. Place the egg white discs in the frying pan, fry until golden, and flip. Add a scoop of egg yolk to the hole in the middle of the disc, and cook a few more minutes. The yolk should hold together.
- Serve and enjoy!
