Lemon Kiwi Oatmeal

Lemon Kiwi Oatmeal

Serves 2


  • 1/2 cup steel cut oats
  • 1/2 cup unsweetened coconut milk
  • 1 cup hot water
  • Juice of one lemon
  • 2 kiwis, diced
  • 1 tsp vanilla
  • 2 tbsp maple syrup


  1. Add all ingredients except maple syrup to a saucepan over medium heat, cook until all liquid is absorbed.
  2. Serve oats, drizzle with maple syrup, and top with additional sliced kiwis and a squeeze of lemon. Enjoy!
