Lemon Kiwi Oatmeal
- 1/2 cup steel cut oats
- 1/2 cup unsweetened coconut milk
- 1 cup hot water
- Juice of one lemon
- 2 kiwis, diced
- 1 tsp vanilla
- 2 tbsp maple syrup
- Add all ingredients except maple syrup to a saucepan over medium heat, cook until all liquid is absorbed.
- Serve oats, drizzle with maple syrup, and top with additional sliced kiwis and a squeeze of lemon. Enjoy!
