Southwest Style Chili

I vegified this from a version my mother-in-law makes that is TO DIE! It’s got some kick, but buckets of flavour, too! And, it’s even good cold…

Southwest Style Chili

Serves 8


  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 medium zucchini, chopped
  • 1 tbsp minced garlic
  • 1/4 cup chili powder
  • 1 tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 cup dried black beans
  • 1 cup dried kidney beans
  • 1 can corn
  • 1 liter salsa
  • 1 large can diced tomatoes
  • 1/2 can tomato paste


  1. Add all ingredients in slow cooker. Stir well to combine.
  2. Cook on low heat for 8-10 hours, until beans are tender.
  3. Serve over rice, and top with a sprinkle of nutritional yeast. Enjoy!
