Southwest Style Chili
Serves 8
Ingredients
- 1 onion, chopped
- 1 red pepper, chopped
- 1 medium zucchini, chopped
- 1 tbsp minced garlic
- 1/4 cup chili powder
- 1 tbsp cumin
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 cup dried black beans
- 1 cup dried kidney beans
- 1 can corn
- 1 liter salsa
- 1 large can diced tomatoes
- 1/2 can tomato paste
Instructions
- Add all ingredients in slow cooker. Stir well to combine.
- Cook on low heat for 8-10 hours, until beans are tender.
- Serve over rice, and top with a sprinkle of nutritional yeast. Enjoy!
