Butter Chickpeas & Cauliflower

This one comes to you by request from an old friend! I hope you like!

Butter Chickpeas & Cauliflower

Serves 6


  • 1/2 cup raw cashews
  • 2 1/2 cups water
  • 1 156ml can tomato paste
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cayenne pepper
  • 1/4 cup garam masala
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp minced ginger
  • 1 tbsp minced garlic
  • 1 tsp salt
  • t tbsp grapeseed oil
  • 1 medium onion, diced
  • 1 medium zucchini, diced
  • 1 cup dried chickpeas, soaked overnight, or 1 can cooked chickpeas
  • 450g cauliflower, broken into small florets
  • 1 large handful power greens


  1. Add cashews, water, tomato paste, and all spices to a blender. Blend until smooth.
  2. In a large frying pan or wok, heat oil over medium heat. Add onion and saute 4-5 min, until onion is translucent.
  3. Add zucchini and cauliflower, saute until tender.
  4. Add in chickpeas and sauce, and turn down to medium-low heat. Allow to simmer 25-35 min, until chickpeas are soft and vegetables are cooked through.
  5. Stir in the handful of greens, and let cook until just wilted. 
  6. Serve over rice. Enjoy!
