Butter Chickpeas & Cauliflower
Serves 6
Ingredients
- 1/2 cup raw cashews
- 2 1/2 cups water
- 1 156ml can tomato paste
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper
- 1/4 cup garam masala
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp minced ginger
- 1 tbsp minced garlic
- 1 tsp salt
- t tbsp grapeseed oil
- 1 medium onion, diced
- 1 medium zucchini, diced
- 1 cup dried chickpeas, soaked overnight, or 1 can cooked chickpeas
- 450g cauliflower, broken into small florets
- 1 large handful power greens
Instructions
- Add cashews, water, tomato paste, and all spices to a blender. Blend until smooth.
- In a large frying pan or wok, heat oil over medium heat. Add onion and saute 4-5 min, until onion is translucent.
- Add zucchini and cauliflower, saute until tender.
- Add in chickpeas and sauce, and turn down to medium-low heat. Allow to simmer 25-35 min, until chickpeas are soft and vegetables are cooked through.
- Stir in the handful of greens, and let cook until just wilted.
- Serve over rice. Enjoy!
