I wanted dessert for breakfast. At least these feel healthy, cause carrots. And, cashew cream cheez icing… come on!
Carrot Cake Oats

Serves two
Ingredients
- 1/2 cup steel-cut oats
- 1/2 cup unsweetened coconut milk
- 1 cup hot water
- 1/2 cup grated carrot
- 1 tbsp crushed pecans
- 1 tbsp raisins
- 1 tsp cinnamon
- 1/2 cup raw cashews
- 1/3 cup water
- 1 tsp lemon juice
- 1 tbsp maple syrup
Instructions
- Add all ingredients but cashews, 1/3 cup water, lemon juice and maple syrup to a pot over medium-low heat. Cook until liquid is absorbed and carrots are soft.
- In a blender, blend remaining ingredients until smooth. Add more water, lemon or maple syrup to desired taste/consistency.
- Serve oats and pour icing over. Enjoy!
