Carrot Cake Oats

I wanted dessert for breakfast. At least these feel healthy, cause carrots. And, cashew cream cheez icing… come on!

Carrot Cake Oats

Serves two

Ingredients

  • 1/2 cup steel-cut oats
  • 1/2 cup unsweetened coconut milk
  • 1 cup hot water
  • 1/2 cup grated carrot
  • 1 tbsp crushed pecans
  • 1 tbsp raisins
  • 1 tsp cinnamon
  • 1/2 cup raw cashews
  • 1/3 cup water
  • 1 tsp lemon juice
  • 1 tbsp maple syrup

Instructions

  1. Add all ingredients but cashews, 1/3 cup water, lemon juice and maple syrup to a pot over medium-low heat. Cook until liquid is absorbed and carrots are soft.
  2. In a blender, blend remaining ingredients until smooth. Add more water, lemon or maple syrup to desired taste/consistency.
  3. Serve oats and pour icing over. Enjoy!
