Hello, everyone!
My name is Katy, and I’m not a vegan. I have lots of friends who are vegan, my brother and my parents are “vegish,” that is, mostly vegan, and I love to cook.
I try to limit the impact that my presence has on the world, and be a positive influence on those around me, and one way that I’ve found to do that is to minimize the amount of meat and animal products we eat in our household. Again, not to say that I don’t love me a good cheeseburger from time to time (but sparingly, I’m also lactose-intolerant), but I’ve managed to work it so that, with the exception of eggs (still working on the best dupe for these, but for now, they’re still here), our diet is vegan. It’s healthier, it’s cheaper (when done right), and it’s much lower impact on the planet.
Now, vegans get a hard time, sometimes, because, like any group, the preachiest ones often end up speaking for the whole community. I’m not here to tell you to never eat meat again, or post tons of cringey PETA videos. I’m just here to show you that vegan food can be cost-effective and delicious, and give you options.
